No-Bake Oatmeal Cookie Bites

          These divine little bites are chewy and sweet. They're perfectly petite, making them a great addition to your summer snack line up! Everyone from kids to adults will be licking their fingers after trying these morsels.

  • 3/4 C. Oats
  • 1/4 C. Peanut Flour (here's a great brand) (or regular flour with 2 tsp. sugar)
  • 1 TBS. Coconut Flour (or extra regular flour)
  • 1/2 C. Milk (sweetened almost milk is my favorite for this recipe)
  • 1/4 C. Peanut or Almond Butter
  • 1/4 C. Honey
  • Optional mix-ins: 3/4 C. nuts, granola or chocolate chips

1) Mix everything together and form into little balls

2) Place in freezer for 30 minutes, or more.

Makes a dozen mini bites 

If you leave them longer than an hour let them thaw for a bit before eating.
