Sinfully Delicious Gin and Tonic Cupcakes

Gin and tonics are definitely a go-to around here, but have you ever tried them in cupcake form? They’re downright sinful. Clearly, we love our alcohol-inspired and alcohol-infused desserts around here.

Ingredients:

Cake:
  • 2 1/2  cups flour
  • 2 eggs
  • 2/4 cup butter
  • 1 tsp salt
  • 1/2 teaspoon baking soda
  • 1 tsp baking powder
  • 2 tsp of butter extract (or vanilla)
  • 1 3/4 cups sugar
  • 1/4 cup yogurt
  • 2 Tbs of gin
  • 1 Tbs of tonic
  • Lime zest (one lime)
  • 1/4 cup milk

 

Gin & Lime Buttercream Frosting:
  • 1/2 cup sugar
  • 1 1/2 cup butter
  • 1/2 cup powdered sugar
  • 1 tbs gin
  • 1 tbs lime juice
  • Lime zest (one lime)

 

Glaze:
  • 2 tbs lime juice
  • 2 tbs sugar
  • 1 tbs melted butter
  • 2 tbs gin

 

Directions:

Cake:
  • First mix flour, baking powder, baking soda, lime zest, and salt in a separate bowl and set aside.
  • Add butter, sugar, gin, yogurt, and milk to mixer. Mix on slow (careful, it may splash you) Slowly add in dry ingredients. Increase speed to medium.
  • Finally add eggs and vanilla. Increase speed to high in order to adequately mix the eggs.
  • Divide among cupcake tins. Fill about half way (about two spoonfuls each)
  • Bake at 375 F for 15 min. and then check by sticking a toothpick or fork in the center. If it comes out clean, then they are ready to go! If not, try adding another 3 minutes and then check again.

Glaze:
  • Melt the butter in the microwave and add the sugar, lime juice and gin. Spoon over cupcakes right when they come out so the mixture melts into the top of the cake.

Gin and Lime Buttercream Frosting:
  • Combine butter and sugars on medium speed. Add gin, lime juice,  and orange extract. Mix on high until whipped.
  • Let set in the fridge. After the cupcakes are cool to the touch, frost, garnish and enjoy!
