Red Robin Veggie Burger

When you and the family have a craving for a Red Robin veggie burger, here is a copycat recipe that you can make at home! They won’t even notice the difference and it’s cheaper than dining out.

 

Ingredients

- 3 tablespoons olive oil

- 1/2 yellow bell pepper, chopped

- 5 mushrooms, chopped

- 3/4 cup edamame soybeans

- 1 teaspoon garlic salt

- 2 green onions, finely chopped

- 1 beaten egg

- 1 carrot, grated

- 1 cup plain Greek yogurt

- Salt and pepper to taste

- 1 cup breadcrumbs

- 6 onion rolls 

Directions 

Heat olive oil in a skillet over medium heat. Throw in pepper, mushrooms and soybeans. Cook for 3 minutes. Add in garlic salt, green onions, egg, carrot and yogurt. Cook on medium low for 25 minutes. Season with salt and pepper. Remove from stove. Mix in breadcrumbs and wait for mixture to cool. Shape into six veggie patties. Chill for one hour and serve on toasted onion rolls with personal toppings.
