Simply Stuffed: Our New Favorite Stuffed Pepper Recipe

This stuffed pepper recipe is one of the easiest, yummiest recipes we’ve tried in a while. It makes 8 servings, so it’s perfect for a large family. You can whip up this meal in no time, but it tastes like a gourmet chef prepared it.

Ingredients:
  • 8 red bell peppers, tops cut off and seeds removed
  • 2 lbs ground beef
  • 2 yellow onions, chopped
  • 1 small can tomato paste
  • 4 garlic cloves, minced
  • 1 tsp of each: salt, pepper, garlic powder
  • 8 slices cheddar cheese

Directions:
  • Preheat the oven to 350.
  • Cook the onions and garlic in a pan on the stove. Cook until the onion starts to turn translucent.
  • Add the ground beef and cook until brown.
  • Add in tomato paste  and then add 1/2 cup water. Bring to a simmer.
  • Let simmer for a few minutes and then stuff the mixture into the peppers, top with cheese and bake for about 30-40 minutes, or until the pepper starts to soften and char and the cheese is bubbled and starting to brown.
