Peachy Pancakes

Considering how many peach cobbler recipes we have around here, we adore these sweet fruits like no other! Since fall is quickly approaching we’re rushing to get as much of them as we can. These simple peach pancakes can help us eat all the peaches we have on hand. Plus, canned peaches are used in this recipe so we can continue to get our fill of this fruit when the weather gets cool.

  • 1 cup flour (all-purpose)
  • 1 tbs maple syrup (honey or sugar are fine too)
  • 2 tsp baking powder
  • 1/2 tsp vanilla extract (maple extract also works well)
  • Dash of salt and cinnamon
  • 1 cup milk
  • 2 table spoons oil (olive or canola)
  • 1 lightly beaten egg
  • 1/3 cup canned peach halves, chopped finely

  • In a large bowl combine the flour, sugar, baking powder, salt and cinnamon.
  • In another bowl combine the rest of the ingredients besides the peaches. Folk those in last.
  • Pour the batter in scoops on a greased hot griddle or skillet. Flip them when bubbles start to form and cook the second side until both sides are golden brown.
  • Top with plenty of fresh peaches!
Makes 4 servings. Double the recipe for a larger family.
