Cool & Crisp Chicken Salad

Summer is already hot so why not pack a cool lunch? Refresh your palate with greens that give you energy before you return to work. For you meat eaters, toss in grilled chicken for a more fulfilling lunch.

 

 

 

Ingredients:

4 (6-ounce) skinless, boneless chicken breast halves

1 package (12 ounces) salad greens

1 medium tomato, cut into thin wedges

1 large cucumber, chopped into small pieces

½ cup of croutons

¼ cup of green olives

Directions:

Place salad greens in a mixing bowl. Take the medium tomato, and cut it into thin wedges or dice. After, toss it in the bowl. Take one cucumber and chop it into small pieces. (If you prefer to peel it beforehand, feel free based on your preference!) After you have chopped the cucumber, mix it in the bowl. Finally, combine the croutons and green olives into the bowl. Grill the chicken in a skillet until golden and crisp. (Feel free to add lemon or pepper for some extra flavor) Place the grilled chicken pieces on top of your salad.
