Halloween Sugar Cookies

Sugary treats are hard to ignore come Halloween time, especially when it comes to cookies. Whip up a batch of these delicious Halloween-themed sugar cookies for a hauntingly fun dessert!Ingredients:

  • 1 C. butter
  • 4 C. powdered sugar
  • 1 egg, beaten
  • 2 Tbs. vanilla extract
  • 1/2 tsp. salt
  • 2 1/2 C. flour
  • 2 egg whites
  • 2 tsp. lemon juice

Directions:

  1. Preheat oven to 375 degrees F. To make the cookies, beat the butter in a mixer until it becomes whipped. Add the 1 C. powdered sugar and mix together. Pour in the beaten egg, vanilla, salt, and sifted flour and mix until all ingredients are combined. Wrap dough in plastic wrap and refrigerate for approximately 1 1/2 hours.
  2. When dough has chilled, take dough out and roll out on a floured surface. Cut dough using Halloween-themed cookie cutters (pumpkin, ghost, spider, etc.) and refrigerate for an additional 30 minutes. When further chilled, bake cookies for 8 to 10 minutes, taking them out before they brown.
  3. To make the royal icing for the cookies, combine the egg whites, 3 C. powdered sugar, and lemon juice to a mixer and mix for 10 minutes. When icing is piping consistency, add whatever food coloring desired and transfer icing to piping bags. Draw an outline on the cookies, and then fill them in with the icing. Leave cookies out for approximately 12 hours to harden, then serve.
