Avocado Bruschetta

Spring is the perfect time to spruce up your favorite dishes with fresh and creamy avocado. This avocado bruschetta is the ultimate treat! Serve alongside your favorite white wine for an easy appetizer your guests will love.Ingredients:

  • 1 to 2 ripe avocados
  • ½ lb. Roma tomatoes, sliced and diced
  • ¼ C. diced red onion
  • 3 Tbs. extra virgin olive oil
  • 1 Tbs. basil, chopped
  • 2 medium cloves garlic, minced
  • freshly ground black pepper and salt, to taste
  • 1 sourdough baguette, cut in ½ inch slices

Directions:

  1. Slice half of the avocados and then follow by cutting the slices in half, crosswise Save these for later.
  2. Dice the leftover avocado.
  3. Combine diced avocado, tomatoes, onion, olive oil, basil, garlic, black pepper and salt.
  4. Place the sliced avocados on top of toasted baguette slices with 2 to 3 avocado slices. Add about 1 tablespoon of the avocado bruschetta on top. Garnish with basil leaves on top.
