This creamy soup is great to sip on while watching the rain patter down your front window. Serve with crunchy croutons. This soup is great for a hungry stomach! Ingredients:
- ½ C. softened butter
- 1 carrot, sliced thinly
- 1 C. fresh broccoli
- 4 cans chicken broth
- 1 block of cheddar cheese, shredded
- 2 C. whole milk
- 1 Tbs. garlic powder
- 2/3 C. cornstarch
- 1 C. tap water
- 1 C. croutons
- In a medium pot, melt butter over low heat. Cook carrot in butter until tender. Add broccoli and broth, and simmer for an additional 15 minutes.
- Add cheese and cook until melted. Stir in milk and garlic powder.
- In a separate bowl, mix cornstarch and water until fully dissolved. Continue to cook until thick. Top with croutons.
