Delicious Greek Tzatziki Chicken Salad Sandwich

Bite into this delicious sandwich. This chicken salad is filled with classic Greek ingredients that will have your mouth watering. This is the perfect light sandwich for a hot day!

Ingredients:

2 Tbs. olive oil

2 lbs. boneless, skinless chicken breasts, cut into ½-inch cubes

1 red onion, sliced

1 pint grape tomatoes, halved

5 oz. crumbled Feta cheese

½ C. pitted Kalamata olives

1 cucumber, peeled and diced

7 oz. Greek yogurt

½ clove garlic

1 Tbs. lemon juice

1 Tbs. red wine vinegar

1 Tbs. extra virgin olive oil

1 tsp. dried dill

1 tsp. dried parsley

Directions:

Heat olive oil in a large skillet over medium-high heat. Add chicken and cook, flipping occasionally, for 6-8 minutes or until golden and no pink remains.

Let cucumber sit in a colander for 10 minutes and wring cucumber dry with a kitchen towel. Place all ingredients in a food processor and pulse until well-combined. Add additional salt and pepper to taste if desired.

Toss all ingredients together in a large mixing bowl. Serve on sliced ciabatta bread.
