Skip the take-out and prepare your own sushi at home! This sushi is filled with hearty pieces of smoked salmon, sweet mango and creamy avocado all wrapped up in traditional sushi rice. Serve with your favorite dipping sauce to complete the meal.
1 lb. smoked salmon
¼ C. mayonnaise
3 tsp. lemon juice
4 tsp. light brown sugar
2 C. short-grain sushi rice
2 ½ C. water
¼ C. seasoned rice vinegar
4 toasted Nori sheets
1 avocado, seeded, peeled, sliced thinly
1 mango, peeled, sliced thinly
¼ C. black sesame seeds
Bring rice and water in a medium saucepan to a boil over high heat. Cover and reduce heat to low. Allow to simmer for 25 minutes. Add vinegar to rice and fluff rice with a fork. Transfer to a parchment paper-lined baking sheet and allow rice to cool completely.
In a medium bowl, mix together salmon, mayonnaise lemon juice and light brown sugar. Place a piece of plastic wrap on a sushi mat. Wet your wingers and spread 1 ¼ C. of rice over plastic wrap to form a rectangle slightly smaller than the sushi mat. Lay nori over the rice. Place ¼ of the salmon at the center of the nori leaving at least 2 inches from the top. Add ¼ of the avocado and mango slices. Fold the rice over the filling and roll into a cylinder. Remove plastic wrap and repeat with remaining ingredients.
After completing each roll, sprinkle with sesame seeds. Slice the cylinders into 6 pieces each with a wet knife. Serve with desired dipping sauce.
