Whether you’re a Work-at-Home Mom or one works outside the home, there’s no excuse for hitting the drive-thru after reading this.
Here are some great ideas to pack your lunch without packing on the pounds.
1) Sick of Salad? Try this twist: 4 cups of mixed greens or baby spinach, 4 sliced strawberries, 3 sliced mushrooms, about an ounce of crumbled feta cheese, a tablespoon of chopped walnuts or pecans (I prefer pecans - they stay crunchier) and 2 tablespoons of light raspberry vinaigrette. Add the dressing right before you eat. Add a fat-free, sugar-free yogurt on the side and you’ve got the making of a lunch that will keep you fueled through the afternoon grumbles.

I know first hand how hard it is to stick to a diet, to exercise regularly, to find the motivation to keep going even when you don’t want to. But what happens when you throw a house guest into the mix?
This past weekend was certainly a test. An old friend of mine stayed overnight Saturday and we had a traditional girl’s night. Before I started training for the marathon relay, I would have thrown all discipline out the window and had a weekend of fattening foods and sitting around. The race is a week away and there was no way I was going to do that. Or was I?
Last week I announced to the world (okay, just you and you, but still, you are my world, baby) that I would be running a relay marathon May 11th.
Hey! That’s Mother’s Day! Forget lying in bed and expecting bacon and eggs from your spawn ~ get up and run a marathon!
Why yes, I’ll take that with a side of what was I thinking? (Seriously, doing fine - I’m up to 5K (3.1 miles). What’s 3 more measly kilometres? I LAUGH IN THE FACE OF SHIN SPLINTS!)
An aside: I keep accidentally typing marathong. Perhaps a Freudian slip in anticipation of my new buns of steel?
Ahem. Anyway.
Part of training for a marathon besides running your fool legs off and getting enough sleep, is feeding your body foods that it can process, use and fuel on. I figured this was advice everyone could use and contribute to.
