Here is a perfect recipe for you to make with some of that extra chicken you grilled last week and then put into the freezer. Remember? Did you do that?
Even if you didn’t, you can grill yourself up some chicken breasts for this so-easy-it-shouldn’t-even-be-called-a-recipe recipe.
You need:
Hummus
Cooked, cubed chicken breast
chopped roasted red peppers
chopped fresh basil
crumbled feta cheese
Step One: Defrost your chicken, or cook it on the grill, or stir fry it. Whatever strikes your fancy. Cut the chicken into bite sized cubes. If you are using chicken that has already been cooked, there is no reason to reheat it.
Step Two: Cut up your fresh basil. I grew mine in my own garden, like Martha Stewart. Except I don’t have gardeners. Are you impressed? You should be because my thumb is not so much black as it is missing.
Step Three: Slice up your roasted red peppers.
Step Four: Heat up your tortilla in a frying pan. You can skip this step if you are using flour tortillas, but I use gluten free corn tortillas and if you don’t heat them up they will just crack and crumble and not taste very good.
Step Five: Spread a layer of hummus on your tortilla.
Step Six: Put a layer of chicken chunks.
Step Seven: Sprinkle on the fresh basil
Step Eight: Add some chopped roasted red pepper. (If you have some feta cheese crumble some in too.
Step Nine: Roll it up.
Step Ten: If you are anything like me, begin heating up your next tortilla with this one still in your hand. It is that delicious.

Hi Chris,
This looks great, and I bought all of the stuff for it with the exception of the peppers. I looked everywhere that seemed logical to me in the grocery store but could not find them. Can you tell me where you find them at your store? Thanks.
