- 1 pkg. blue corn tortilla chips
- 16 oz. can refried beans
- 1 whole diced tomato
- 1/3 C. chopped white onion
- 1/2 lemon, juiced
- 1/2 C. shredded Monterey Jack or cheddar cheese
Heat the beans. In a small bowl, combine the tomatoes, onion and lemon juice. Arrange chips on a large serving platter. Spoon the beans over chips then top with tomato mixture. Sprinkle cheese over everything.
