Tofu Stuffed Peppers

Whether you’re doing Meatless Mondays or want to take a break from cooking meat on the grill, these 10 recipes make excellent summer meals! Have these tofu stuffed peppers for a light dinner.


  • 1 cup brown rice, uncooked
  • 2 cups water
  • 2 teaspoons olive oil
  • 12 oz. extra-firm tofu, drained and diced
  • 2 garlic cloves, minced
  • 2 cups marinara sauce
  • 4 bell peppers
  • 1 cup shredded mozzarella
  • Salt and pepper to taste



Preheat oven to 350 degrees. Boil water in pot and pour rice. Reduce heat and cook for 25 minutes. Over medium heat, heat oil in skillet. Throw in tofu and garlic. Stir for five minutes. Add 1 cup marinara sauce and salt and pepper to taste. Cut peppers in half and add layer of rice to each pepper. Layer tofu mixture on top of rice. Top with marinara. Garnish with mozzarella cheese and bake for 20 minutes.
