Whole Grain Tomato Basil Breakfast Casserole

Getting your kids away from the sugary cereal and towards healthy whole grain breakfasts doesn't have to be impossible. This whole grain tomato basil breakfast casserole will have kids wanting more healthy treats in the morning.


  • 16 oz. loaf of whole wheat bread, cut into small cubes
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 2 tablespoons olive oil
  • 3 shallots, thinly sliced
  • 2 garlic cloves, minced
  • 12 oz. cherry tomatoes, cut in half
  • 1 cup chopped basil leaves
  • 1 1/2 cup Parmesan cheese, grated
  • 8 eggs
  • 1 cup whole milk


  1. Preheat oven to 375 degrees F. Spread bread cubes in a greased 9x13 dish.
  2. Heat the oil in a skillet over medium heat. Add the shallots and let cook for 4 minutes. Mix in tomato halves, garlic, 3/4 teaspoon salt, and 1/2 teaspoon pepper and cook for 4 more minutes. Turn off heat and add the chopped basil and Parmesan. Pour mixture over bread cubes.
  3. Whisk together milk, eggs, 3/4 teaspoon salt, and 1/2 teaspoon pepper in medium bowl. Pour mixture on over bread cubes and tomato basil mixture. Press bread cubes into egg to make sure that it's fully coated.
