Scalloped Sweet Potato Casserole

Sweet potatoes, or yams, aren't too difficult for kids to love. It doesn't have to be Thanksgiving to whip up a healthy scalloped sweet potato casserole for the family to enjoy!


  • 4 sweet potatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 3 cups cheddar cheese
  • 1 cup Gorgonzola cheese, crumbled
  • 1-1 1/2 cups heavy cream
  • 2 teaspoons oregano, chopped
  • 1 teaspoon thyme, chopped
  • 1 tablespoon rosemary, chopped
  • Salt and pepper, to taste


  1. Preheat oven to 325 degrees F.
  2. Peel sweet potatoes and slice thinly. Layer 1/3 of the slices on an oiled pan, slightly overlapping each other. Top the slices with salt, pepper, and 1/3 of the onion, garlic, cheese, and herbs. Repeat this layering two more times until ingredients are used up.
  3. Pour 1 cup heavy cream into the pan and cover with foil. Bake for approximately 1 hour.
  4. Remove foil and check if potatoes are done. If not, add remaining 1/2 cup heavy cream, rewrap foil, and bake for 15 minutes.
  5. Remove foil and bake uncovered for 15 minutes until cheese is slightly browned. Let casserole cool down and serve.
