Chocolate Cake With Whipped Cream Raspberry Frosting

The end of summer means the end of the freshest fruits. Combine your raspberry cravings with your sweet tooth in this chocolate cake with whipped cream frosting. End your summer in the sweetest way possible.

Ingredients for Chocolate Cake:

  • 2 eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 3 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 3/4 cups all-purpose flour
  • 2 1/2 cups sugar
  • 3/4 cup cocoa

Ingredients for Raspberry Whipped Cream Frosting:

  • 3 cups whipping cream
  • 1 1/2 cups powdered sugar
  • 2 cups fresh raspberries, 1 for frosting and 1 for decorating

Directions:

  1. Preheat oven to 350 degrees F. Grease and lightly flour 2 9-inch round pans.
  2. Mix dry ingredients for cake in a large bowl, then add milk, oil, vanilla, and eggs. Beat on medium speed for 3 minutes. Mix in boiling water and pour resulting batter into pans.
  3. Bake for approximately 30 minutes. Let cool 10 minutes and remove cake from pans. Make sure cake is completely cool before frosting.
  4. For frosting, beat whipped cream, sugar, and raspberries together in mixer until firm. Spread half of the resulting frosting onto one layer of chocolate cake. Place second cake layer on top and spread remaining frosting. Decorate with remaining raspberries and cocoa.
