Garlic Potatoes With Cilantro

Few foods make a perfect side dish better than potatoes. Whether they're mashed, fried, grilled, or diced, you can count on a plate of taters to be a great addition to your summer meal. Try these quick and easy garlic potatoes for a refreshing Labor Day dish!


  • 4 potatoes, cubed
  • 1 quart oil, for frying
  • 1 teaspoon vegetable oil
  • 2 1/2 cups fresh cilantro, chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 2 tablespoons lemon juice
  • Pinch of salt


  1. Pour oil in a deep fryer and heat up to 375 degrees F. Add in potatoes and cook for 8-10 minutes, or until light brown. Drain on paper towels.
  2. In a skillet, heat vegetable oil over medium heat and add cilantro and minced garlic. Cook for 5 minutes. Add drained potatoes, lemon juice, chili powder, and salt to skillet. Coat potatoes with mixture and serve.
