It's been three months of summer, and everyone's stomachs ache from all the ice cream and froyo binges. Take a break from the obvious summer treats and try some peanut butter cookies with a twist this Labor Day.

Ingredients for Cookies:

  • 12 tablespoons butter, softened
  • 1 1/2 cup smooth peanut butter
  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Ingredients for Chocolate Glaze:

  • 5 oz. dark chocolate
  • 1/3 cup heavy cream

Directions:

  1. Preheat oven to 350 degrees F. Beat butter, peanut butter, sugar, and brown sugar in a mixer bowl for 3-4 minutes. Add eggs and beat.
  2. In separate bowl, mix flour, baking soda, and salt. Add into peanut butter mixture.
  3. Scoop dough into balls and lay them out on two greased baking pans. Bake for 10-12 minutes until golden color shows.
  4. For chocolate glaze, heat heavy cream over low heat in a saucepan. Add dark chocolate when cream starts to steam, and stir until glaze mixture forms.
  5. While glaze is still hot, drizzle chocolate over each cookie.
