Fruity Icebox Berry Pie

Nothing’s better than a pie you “cook” in the freezer! Crunchy graham crackers go soft and turn into a cake-like filling for a dessert that’s guaranteed to be a hit at your next party. This is a great base recipe to build on. Make it sweet, savory, or both!

3 1/2 C. heavy cream

2 tsp. vanilla extract

2 lb. assorted berries

30 graham crackers

1/2 C. powdered sugar



With a stand mixer, beat the cream until thick. Add in the sugar, vanilla, and salt and continue beating until evenly mixed. In a pie pan, spread one thin layer of the cream mixture to make your crackers stick. Cover the pan with graham crackers, cracking them when necessary to fit. Spread out a layer of the cream and then cover with berries. Continue alternating layers of crackers, cream, and fruit until finished. Garnish pie with extra fresh fruit. Cover, chill for 2 hours, and serve.
