Broccoli Cheese Soup

This creamy soup is great to sip on while watching the rain patter down your front window. Serve with crunchy croutons. This soup is great for a hungry stomach! Ingredients:

  • ½ C. softened butter
  • 1 carrot, sliced thinly
  • 1 C. fresh broccoli
  • 4 cans chicken broth
  • 1 block of cheddar cheese, shredded
  • 2 C. whole milk
  • 1 Tbs. garlic powder
  • 2/3 C. cornstarch
  • 1 C. tap water
  • 1 C. croutons


  1. In a medium pot, melt butter over low heat. Cook carrot in butter until tender. Add broccoli and broth, and simmer for an additional 15 minutes.
  2. Add cheese and cook until melted. Stir in milk and garlic powder.
  3. In a separate bowl, mix cornstarch and water until fully dissolved. Continue to cook until thick. Top with croutons.
