Incredible Pastitsio (Greek Lasagna)

Expand your flavor palate by trying this lasagna with a new twist. The layers of tender pasta, seasoned meat and never-ending cheese will make this dish a new family favorite. It is doubtful there will be leftovers!



6 Tbs. unsalted butter

¾ C. all-purpose flour

1 qt. whole milk, warmed

1 tsp. salt

3 large eggs


4 Tbs. unsalted butter

2 medium onions, chopped

2 lbs. lean ground beef

1/8 tsp. cinnamon

Salt to taste

Pepper to taste

½ C. water

2 Tbs. tomato paste

1 lb. ziti pasta

3 large eggs, beaten

1 tsp. salt

14 oz. Kasseri or Kefalotiri cheese, grated

Parsley to garnish


For the sauce, melt butter in a medium saucepan over medium-low heat. Whisk in flour and gradually whisk in hot milk. Cook until the sauce is thickened, whisking constantly. Stir in salt. Remove from heat and let cool. Once room temperature, whisk in eggs and set aside.
